French Oven Beef stew


Combine 2lb beef stew meat cut into bite size chunks; 2 med. onions, sliced; 3 stalks celery, sliced; 4 carrots, sliced. Mix 1/3 C. tapioca, 3 C. tomato juice, 1 Tbs. salt, 1/4 tsp. pepper, 1/2 tsp. basil.  Pour over meat and vegetables.  Cover and bake at 300 degrees about 2 1/2 hours, stiring occasionally.  Add more tomato juice if too thick.
Add 2 med. potatoes, sliced- cook 1 hour longer.  Serves 6-8
